July 2nd, La Valais region, Tastings, Raclette

After a long bus ride and breakfast we arrive in La Valais viticulture region. There we walk through vineyards and taste wine on a terrace in the vineyard. The region is unique in that they need to irrigate here due to geography and daily temps.

We were all invited to Madalin Mercier's (Changin Alumni) residence in La Valais for the evening. There we saw the winery and were served a local treat, raclette cheese with wine.

Four different villages were represented in the Raclette offering. The difference in taste from each producer was paramount. The two german influenced towns showed more pungent aromas bordering (ammoniated, funky). The two French style villages were more creamy and less aromatic but with nutty notes.
